The cauliflower curry

When we visited friends in Vienna and were pampered with a delicious Thai curry, the desire was fired up to make a curry ourselves again. Since we often do not have the opportunity to get many fancy ingredients, we use a curry paste and coconut milk as main ingredients. The veggies we use vary, depending on what we have or get and what we like best at the moment.

This time I wanted to use cauliflower and I also found some lovely little onions. I just break the cauliflower into little “trees” and cut the onions in half or into quarters depending on their size.

Chopping some garlic and ginger
A spoon of coconut oil to start
adding the garlic and ginger
2 little spoons of red curry paste (or more)
adding the veggies
stirring well, adding smoked salt and pepper
finally adding a can of coconut milk
when the veggies are tender, your curry is ready!
add lime juice and coriander and serve with rice

Ingredients:

1 generous spoon of coconut oil
1 cauliflower
a couple of little onions
2 cm of ginger
2 cloves of garlic
red curry paste – 2 or more spoons, depending on how hot you like it
1 can of coconut milk (400ml)
1 lime
coriander

Of course you can change the vegetables to what you like best!
