Baking cakes

Our little oven has already served us well many times. Now it was time to try some cakes.

I don’t have a baking sheet but 2 little pans, which turned out to by quite good for making cakes. For the red current cake, I used both of them but had to bake one after the other.

Recipe for an easy red current cake:

Preheat the oven to 160 degrees.
Whisk together:
100g butter
1 TS Vanilla sugar
120g sugar
5 egg yolks
300g whole grain spelled flour
1 TS baking powder

Grease the tray and spread the dough – bake for 20min

Meanwhile, prepare the berries
Beat 5 egg whites with 200g sugar
add the berries to the mixture and spread on the cake
let it dry in the oven at 120 degrees for 40 minutes

Apfelstrudel

As our son was coming to go hiking with us, I had picked up some ready-made pastry and some apples from the supermarket to bake an Apfelstrudel.

The pastry sheet fitted perfectly into my pan. I had peeled and cut the apples and tossed them together with some raisins, lemon and sugar. When closing the pastry over the apples I tried to make a little pattern with it and in the oven it went.

With 3 spoons for 3 hungry hikers, this Apfelstrudel quickly was history 😉
